I’ve brought these into my office twice in the past couple of weeks and they are a hit with my coworkers! Just this morning someone said to me: “Did you put crack in them? Because I want to steal the tin and hide them in my desk.” XD I told her the powdered sugar was probably the closest thing, hehe! ;D The original recipe I found in a cookies book, but I tweaked it slightly to fit what I like.
Vanilla Snowballs
- 2 sticks unsalted butter, room temperature
- 1/2 cup powdered sugar, plus more for rolling
- 2 cups all purpose flour
- 1/4 tsp salt (I used Kosher)
- 1+1/2 tsp vanilla
Cream butter until light. Gradually add in the 1/2 cup of powdered sugar and beat until well blended. Add the flour, salt and vanilla and beat again until well blended. The dough will be stiff. Shape teaspoonful dough into 1-inch balls. Bake at 375 degrees for 9-12 minutes (don’t let them get too brown). Cool slightly, then roll in powdered sugar while still warm. Store in an air-tight container! I like to sprinkle more powdered sugar in the container after packing the cookies in. :)
These are very quick cookies to make and are quite delish! You can add nuts too, if you like, during the last phase of blending. The original recipe used walnuts and actually called them “walnut balls”, but I’m not a fan of nut-filled cookies so I left them out. Nom nom! :D







I should try these in February. That’s when Texas usually gets snow. Haha!
