Slow Cooker Potato Soup

I almost – almost – considered tweeting something “foolish” today (like “ZOMG PREGNANT!!1one!1″) but figured that’s too typical. And then I got distracted so I never posted anything. So hopefully you were happily “fooled” and/or amused by other shenanigans today. :D

Also since it is April 1st, it is the first day of the Sarai’s List Blogging Challenge! A bunch of us over at Snark Forums have decided to use fellow member Sarai’s list of blogging ideas to motivate us to blog once a day (or a week in some cases) and hopefully make it more of an enjoyable habit! I’ve chosen topic #10, Your Favorite Recipe. An easy one, I know… but it’s late into the evening and I was busy today ok?! D:<

ON WITH IT. So my current favorite recipe is a to die for delicious potato soup made in a slow cooker. What makes it even better is that you can whip up a huge batch and freeze it in several gallon-size bags for an easy dinner fix when you don’t think you’ll want to (or have time to) cook a full meal. It’s also heavenly to walk into the house after it’s been cooking all day long. :9

Slow Cooker Potato Soup (freezable!)

Potato Soup

This is how I prepare the soup in freezable batches (you will need 3 one gallon bags):

Ingredients

  • 5lbs Yukon Gold potatoes, diced & unpeeled
  • 1 yellow onion, diced
  • 10 teaspoons garlic, minced
  • 8 cups chicken broth
  • 16 oz cream cheese, softened (I used reduced fat “Neufchâtel”)
  • 1 Tablespoons Lawry’s Seasoned Salt

Directions

  1. Divide all ingredients (except cream cheese) evenly into each bag. Seal and freeze. EASY!
  2. To prepare for cooking, let a bag thaw slightly overnight in the fridge.
  3. In the mroning, dump bag contents into the slow cooker (4-6qt). It’s ok if it’s still frozen!
  4. Turn setting to LOW and cook for 6-8 hours. I usually do 8 because I work during the day!
  5. After the 6-8 hours, add the softened cream cheese.
  6. Allow to melt, stirring every 10 minutes or so.
  7. AND DONE! I love to eat this with crusty bread. Carbolicious!

It’s easy to get addicted to cooking like this, because all you have to do is a couple hours of prep and you could make 2-3 weeks worth of easy dinners!

    I LOVE potato soup (WITH LOTS OF CHEESE IT IN), but probably not as much as I ABSOLUTELY ADORE that soup bowl in the photo. Where can I get one?

    This looks really good! I love the idea of adding cream cheese – we usually use Neufchatel too.

    I also like that it would also be really easy to make this vegetarian by using vegetable broth instead of chicken. Woo! Husband-compatible potato soup!

      Okay, this soup is in the slow cooker! We did a half-batch (just so we didn’t have a boatload of it for our first try) and added some carrots to the recipe. I’ll report back with our results!

          Reporting back: It hit the spot! Got good reviews from myself and Daniel; Wesley was indifferent but said “Mmm mmm mmm” after eating some of the carrots I put in.

          I think I would make some smallish changes if we made it again, like maybe thinning it down a weensy bit with milk or cream or something, because the cream cheese was a genius addition but flavor-wise it overpowered the potatoes a little bit. Daniel’s sister made us a very similar soup (hers had cream cheese too, and corn and maybe peas? I forget) a few months ago so I might ask for her recipe to see if it was very different.

          Overall though, thumbs up from us! We’d make it again.

    This sounds tasty, I’ve never had potato soup before. Maybe I’ll have to try it sometime. Hubby’s on a grill kick right now, so I doubt it’ll be soon, lol. He serious wants to grill something *every* night, but hey, it means I don’t have to cook :D

    Ahhh, that sounds delicious. I’m not a huge fan of potatoes by themselves, but potato soup is amazing. I’m planning on getting a slow cooker for when I move out, so I will definitely have to save this recipe!
